Mmm banana bread. full-fat, none of those transfats or crisco. yummalicious. I made 3 loaves (I hosted a playgroup - the other two loaves are for us.) My secrets? 1. when bananas go black and no one will eat them, put them in the freezer. When husband starts getting pissy about the bananas falling out on him when he opens the door looking for ice cream, it's time to make banana bread. 2. Use walnuts AND pecans. 3. keep the butter wrappers and use them to grease the pans really well.
